Lately, I have not done a very good job of meal planning ahead. I do just fine when we have company but when it is just my husband and me here, I've lately not planned ahead much.
So, yesterday, I organized my recipes and planned out about 8 meals - all using ingredients we already had or bought yesterday.
There are a couple of quarts of homemade chicken broth in the fridge so I put chicken and noodles as one of the meals. Then I made the noodles last night so they could dry.
Other meals on my plan
crockpot chicken and veggies
pinto beans and cornbread
Barbecue chicken sandwiches with pickled onions on jalapeno cheese buns
salmon patties
rice taco salad
fiesta chicken and rice
catfish and hush puppies
This is probably close to 2 weeks worth of meals for us as most of these recipes make more than 2 servings. We both like leftovers and will happily eat the extras for both lunches or suppers, however it works out.
I hear so many people say they don't like leftovers.
That seems so silly and wasteful to me.
Most foods that were good the first time they were served, are just as good the second time.
There are a few exceptions but for the most part, we enjoy leftovers.
I also hope to do some cleaning projects this week -
like the dusty ceiling fans and all the windows.
I've also got a sewing project involving woodland camouflage fabric - the things we do for our sons!
We love leftovers too! I also enjoy coming up with other meals to use leftovers creatively from time to time--fun for me!

Hello Rhonda. Thank you for stopping by my blog and becoming a follower. You are welcome anytime. I have joined your site as well and got a bit of a chance to skim over a few of your posts. I will come back again when there is more free time. I read about your meal planning and pinto beans and corn bread will be one of our meals this week too. My husband likes wilted lettuce and green onions from the garden so naturally I have to cook some beans for him. We eat leftovers all the time. You are so right and I agree, what a waste of good food to just throw it in the trash. Some foods like chili and potato salad always taste better on the second day anyways. Some folks just don't know what they are missing. It is a waste of good money too. I learned a lot from a mother who had to grow up fast in Germany during WWII and a mil who lived through the depression. These 2 women raised many children and there was not a whole lot of money. Both were homemakers and you made do, or did without. Clothes were patched and mended and in my mil's case if it wore out she took what was left and made a quilt.

Love your flowers!!! And I am the same as you. It is easy to figure what to cook for a crowd but when it is just the 2 of us it is hard. I haven't cooked much since I have been down with my shoulder but I am planning on doing the same thing as you..planning according to what I have!!!
ReplyDeleteHi Rhonda ~ your flowers are gorgeous! I love the color of your lilies. All mine are orange - and haven't bloomed yet. I haven't been good at meal planning for a long time lately. I seem to fly by the seat of my pants, most of the time. Guess because it's usually just Brian and I. Tim (son) is not home most evenings. He and Brian will happily eat leftovers. Me? I'm kinda picky. It depends what it is. I'm not much of a meat eater as it is, so if it's any kind of leftover meat, that turns me off even more. However, things like bean dishes or your BBQ chicken (shredded, over rice) I would definitely eat.

ReplyDeleteYour flowers are gorgeous! Like Melanie, I'm picky about leftovers and I don't eat a lot of meat. Wish my husband was home! Kendall works all the time & rarely eats at home. So it's just me & the girls to cook for. I need to start looking for fast, easy, kid-friendly recipes for now.

DeleteYour flowers are so pretty! We enjoy leftovers too. In fact, there are many foods that actually taste better the next day because of the flavors having a chance to "marry" in the fridge overnight.
ReplyDeleteYour front walkway looks so nice. It's going to be so gorgeous when the zinnias bloom. They are such pretty flowers and I find them so easy to grow.
ReplyDeleteI had stopped planning my menus for a few months and I could really tell in my grocery bill. Back on track now and I always wonder why I let it slide. It really makes my life so much easier!
