Some of this week's cooking

One morning I baked a batch of blueberry muffins from a Betty Crocker mix bought on sale for .99.
I used a Pinterest tip about how to increase the flavor by adding the blueberry juice from ththe can that is usually discarded as part of the water.  This made the batter quite purple but once it was baked,  the  muffins were almost normal color and they did have a stronger pleasant blueberry flavor.
Heidi in Holland says this a very common meal in the Netherlands.  It is potato cubes simmered until tender and then mixed with sautéed onion and sliced sausage with a can of drained green beans.  
I haven't made this in a while. It tasted very good and is a nice dish for the beginning of Autumn.

This is French Bread Pizza inspired by a YouTube video by DivasCanCook.  
The loaf of bread is cut lengthwise from top to bottom, then opened and flattened.  Brush with a little garlic butter and bake for 10 minutes until it just starts to toast.  Then add the desired toppings and bake about 15 minutes more.  Her video is really good but just 3 minutes or so,  so if you want to try this pizza,  her instructions are quick and just right.

  1. When I was growing up my mom always used part of the juice in her blueberry muffins. I was an older teen before I ever knew they were not supposed to be light purple.

  3. I think I will whip up some blueberry muffins for afterschool snacks. The sausage and potato meal looks great. I will have to keep that in mind for the next pitch-in Chuck's department has.

    1. Wendi, I think this Dutch Farmers Dinner would be popular at a carry in dinner. It's also economical and easy.

  4. My brother called me one morning not too long ago to tell me that he had added the water from the blueberry can to the mix by accident. I told him no, you are supposed to drain it off. Well, we talked the whole time the muffins baked and at the end of our conversation, he tried a muffin and said they were just fine! Looks like it's okay to add the juice! I also add more blue berries. Going to take a look around here at your blog. The above photo of you and your mom is wonderful, you are both so pretty!

    1. Hi Joy, your brother made a good mistake. I will always add the juice from now. I never liked pouring it out before, just seemed wasteful.

  5. Honestly, the color of the muffin doesn't really matter. What matters is the taste and texture, and there is nothing bad about more flavor. :)
    That sausage/potato meal (doesn't Heidi call it Farmer's Dinner or something similar?) is something my dad would have liked. I thought of him when I saw the photo.

  6. I love sausage and potatoes. I've never thought about adding green beans to them. I'll have to add this to my list in two weeks.
