Peppers and tacos and cookies


Hello, on my to do list was to deal with a bunch of jalapeños my husband grew.  
For some of them, I used my friend Dawn’s recipe.

I think these will be so nice to pull out and bake some whenever we like.  

With the rest of the jalapeños, I found a very simple candied jalapeño recipe and did that to the rest of them. 
Candied jalapeños are really good on a cracker with a smear of cream cheese.  



Supper was lentil tacos in crunchy shells with naked okra.  


My grandsons that live on a farm gobbled up the lentil tacos.  In fact the oldest grandson ate 4. 
He is not a picky eater but he never mentioned anything about the lentil tacos being different from the beef tacos he has always had before.  

I really think the lentil tacos would appeal to anyone that likes tacos.  They are seasoned up just like beef taco meat.  

Gavin and Braeden really do live on a small farm.  Their daddy has beef cows and their momma has dairy cows. The boys help with both.   
This is one of their guernsey calves right after they showed her at our county fair.  



Yesterday, I baked 2 batches of cookies.  Most of them are for this weekend’s cookout.  
I used this recipe for the chocolate chip ones except I used semisweet chocolate chips and I made mine just regular cookie size 

Cookie Madness is a great blog, written by a regular mom who won the Pillsbury Bake Off maybe 10 years ago.  She bakes lots of cookies and other desserts and you can trust her recipes and advice.  



The other is a recipe I’ve used for lots of years but I added homemade pumpkin spice blend.  They have no real pumpkin in them.

  1. Aww, what sweet grandsons! The Guernsey calf is adorable as well.

    Lentil tacos are a huge favorite around here! I use taco-flavored lentils in tacos and Chipotle-style bowls, and last time, I took the leftover lentils and rice, mixed them together, and wrapped them in a tortilla with a little bit of salsa and cheese. I stuck all of those in the freezer and my son has been loving them for his school lunches. He's already getting sad that we're almost done with the batch! I may have to make some more. :)

    Your cookies look lovely, too! Mine always look more like haystacks, not the regular flat-ish round cookie shape.

    1. Hi Aleane, if you click on the link for Cookie Madness in my previous post, it goes right to the recipe I used. I think it’s called all brown sugar chocolate chip cookies. You are right she has lots of recipes. I’d like to try every one of them :)

  4. I love the idea of lentil tacos. I'm glad the kids don't notice anything. The county fair is so much fun and you can tell the boys are so proud. Have a great week.

    1. Hi Evelyn, I didn’t share my recipe because I made these at the last minute and kind of merged a couple online recipes to use ingredients I had on hand. I hope my method will turn out and I think it will, but it may not.
      However there are many tested recipes online you could choose from if you want to make your own.

  7. I've made lentil tacos before - they're very yummy! Have you ever tried red lentils? Not in tacos, but in soup, for example. I like them even better than the regular lentils and they're easier for my tummy to digest. If you're interested, you can always email me and I can send you the recipe for our favorite red lentil soup.

    I've never heard of the blog, Cookie Madness. I'll have to go take a look at it, though the problem is, then I'd crave cookies! ;-) I'm doing no sugar again, so I can't give it to temptation. Guess I'll have to pin recipes for some other time. :-)

    1. Hi Melanie, your soup sounds good and I do have red lentils that I bought in bulk at Sprouts but haven’t tried yet.

      Cookie Madness has so many cookie recipes, she really may have some recipes with alternative sweeteners. And if she does, I think her reviews of them would be spot on.

  8. I need a good jalapeno jelly. Love that on crackers with cream cheese. Love all this vegetarian stuff, we still do most of the week vegetarian. Love being on here, feels like home, don't know what it is about your blog.:)

      I truly am happy eating no meat. Thank you for the inspiration to try it. We have zero plans to go Vegan though. We like our cheese and butter :)

    1. To cook, I heat up a nonstick skillet with just a teaspoon of olive oil. Then I add a single layer of frozen okra and cook it on medium high, flipping it as need to get both cut sides nice and brown. Add salt and pepper as desired and some diced onions toward the end of the cooking so they don’t burn.
      It’s isn’t slimy and is just so good!
      If you try this, remember the single layer is important. If you try to cook a big batch for a group, in 1 pan, like I did 😱 You Will End Up With Okra Mush.

  12. I think I need to try those lentil tacos! My kids LOVE tacos, but we don't have them super often because it takes so much meat. I typically stretch it with some black beans added in, which they don't mind, so I'm guessing they'd enjoy the lentil version too.
