Need a frugal meal?

Tasty Lentil Tacos might sound like an oxymoron but they really are good!  Yes, the texture is different than meat but I think with the taco seasoning,  it tastes identical to meat tacos.  
The extra lean pure ground beef I prefer from Walmart is about $8 a pound now.  
Lentils are about $1.25 a pound, and if you cooked the whole pound, it would yield a lot more than 1 pound of meat.  


So, I cooked up a batch of lentil tacos and we enjoyed them for 2 days.  
The first night we had them in taco salad bowls.  The second meal, we had rice and taco bowls with which ever toppings we preferred.

These are the taco bowls we have occasionally- they are in the refrigerated section.  
I like them really crunchy and bake longer than the packaging suggests 


Lentil tacos won’t fool very particular eaters but they are delicious, quick to cook and thrifty

  1. These sound and look delicious. I think a dab of meat cooked with a lot of beans might make it more tolerable for picky folks.

  2. I just made tacos the other day using black beans. With all the toppings, of course. I want to stay away from chopped beef. We usually make our chili and taco with ground turkey. Even that is becoming cost prohibitive.

  4. I agree...meat is so expensive these days. Maybe 1/2 lentils and 1/2 meat would fool my grandchildren??

  6. You know I agree with this! I love the lentil tacos and while it's not the same texture as burger it's not so far from it that you mind. John happily eats the lentil taco filling without complaining that it's meat free. For those unsure of it, I have mixed it half and half with cheaper ground meat that was well drained and the children ate it well...All but Josh who looked at his third and said "Wait a minute...there's some kinda bean in here! I'm done!" lol Notice I said he was on his third.

    I've been wondering how lentils might work in my sloppy joe recipe which also includes finely diced carrots, onion, celery and zucchini as well as tomato sauce. I've got to remember to give that a try as well.

  7. That is hilarious that Josh discovered a bean in the third taco. Why not make homemade refried beans. Kids will eat that. They put refried beans in tacos, don't they? Why not>

  8. Thank you for this! We don't eat any meat anyway, but this is such a great idea. I make lentil soup and lentil loaf, and now I have another way to use the wonderful lentils!

  11. I've made lentil tacos before - they're very good! Unfortunately, I don't digest lentils very well anymore (though red lentils are easier on my stomach) though.

  14. Yes! We eat taco-spiced lentils all the time. I just made them a few days ago in order to make homemade Chipotle bowls. HUGE favorite around here, they're so good! I've served them many times in tacos and burritos and pans of homemade enchiladas as well. They're so perfect for us non-meat-eaters! :)
