January 8 - back to home stuff

Hello everyone 
Here are some of the things I’ve been doing this week
 
We needed some grated cheese and there were blocks of  cheese in the fridge so I got out the Presto Salad Shooter and grated a bunch. 
Then it went in containers and into the freezer and fridge for future meals.
Home grated cheese freezes great, as long as it’s not smashed down in to the container.

I made a salad and the tomatoes were so small,  I didn’t even half or dice them.  


When we set the bedrooms back up after the carpet installation,  many cans were stacked on this 15 inch deep lower shelf, in no particular order by some eager grandchildren.  
It looked neat but I couldn’t find the right cans when I needed them.  
So the same helpful grands unloaded that shelf and semi-sorted them this week.  
 

Then later,  I rearranged shelves and found better places for the cans and kept them sorted


I got out a cross stitch project I started years ago and stitched a bit on it,  but I’d really prefer stitching using bigger hoops so I’ll get some soon. 
The current set are just 4 inch hoops. 

I finished reading   A Thread So Thin
It was good, not the best book ever but I’ll keep reading the series as I find the books.  


If 2020 and 2021 were muffins.............
This recipe was in today’s local newspaper. 
I like muffins for breakfast,
And I like broccoli and cheese for supper 
but I think broccoli cheese muffins sound like a very strange way to start off the morning 🤢

  1. I agree that is one weird muffin! I desperately need to clean my pantry! Did deep freeze yesterday. Doing a pantry challenge this month!

  2. Tommy puts things on shelves and I cannot find things later. I just let him do it, but he only puts one here and one there. I am not sure when I would eat that muffin. It looks dinner-ish to me.

  4. Slowly working my way to the pantry. I am cleaning rooms one by one. Tomorrow I work on decluttering and deep cleaning the bathroom.

    I think I just might have that muffin recipe in one of my older cookbooks.

  5. The broccoli muffins made me giggle. Sometimes I make egg casserole in muffin tins, and sometimes that has broccoli in it, but not like regular "muffin" muffins.
    I usually use the food processor to shred large amounts of cheese, but your salad shooter reminds me of the Saladmaster thingy my mom had when I was a kid. It had several different attachments so we could shred various sizes, and slice various sizes. That thing was sharp, and I shredded a little skin a few times...

  6. What a great idea to use the Salad Shooter for grated cheese. I stopped buying grated cheese and only buy block. Normally we eat it up before it gets moldy. My freezers are very full at the moment but I will keep it in mind for this summer.

  7. So how do you use your frozen shredded cheese? Can you use it thawed on salads?

  8. Jenny, we use the frozen grated cheese for tacos, pizza, salad- anything we use regular grated cheese for. For salads, it’s is the same as if it was never frozen but let it thaw before you add it to a salad

  10. Great idea on shredding the cheese! I always freeze cheese...I buy it already grated in bulk, and portion it out into 1 cup containers or even baggies and lay it flat. (takes less space). You are right, when thawed it is just like fresh.

    Nice job on the pantry organization...I am sure your "helpers" meant well the first time :)

    Wondering if the grands are still doing school with you in your home?

  11. Jane @lejmom 5 of our grands attend school districts where school is in person.
    3 of them are in school districts with only virtual school while the district is in a Covid red zone. Those 3 have educators for parents and their parents supervise and assist with 98% of their virtual assignments and work. I just help when they can’t or truly need a break.
    I don’t think parents have to be professional educators to help with virtual learning, I think someone just needs to put in the effort. And I’m very glad my daughter and son in law do. But it is tough.
