To do list, today’s lunch, and my husband’s orchids

Good Monday to everyone. 
Last week was pretty much a bust for me as I was sick with a cold all week.  It came on when I went to bed Sunday night and now, a week later, I think I’m finally pretty much well except for these coughing spells.  Thankfully, the coughing is less and farther apart now and I’m starting to feel pretty good again.  

I hope all of you are avoiding these winter bugs.  They are no fun. 

Below is a list of what I hope to get done this week.
For the meal plan, I added more things than we would eat in a week but this gives me options as I cook and pick from what suits our moods and if we have any company.  

Here’s a photo as I started our biggest meal today.  
I made chicken fajitas, Mexican rice and pinto beans. 
The beans were home cooked and frozen previously and the bell peppers were from our backyard garden and frozen back in the summer.  

I set out the cooked food, buffet style, and my husband and I each fixed our plate to suit us.

I purposely cooked more than we needed for one meal.  
The leftovers went into vintage Pyrex and are stored in the fridge.  We will reheat as we like for lunch or supper this week.  

My husband bought that blue orchid just before Christmas and we both really like.  
And he’s since bought 4 more.  He’s been reading up, watching YouTube, talking to the Lowe’s garden staff to learn about caring for them.  

They like sunlight and they don’t like cold drafts so sometimes they hang out in the living room and sometimes in the breakfast nook.  
Orchids last so much longer than cut flowers too.  

That’s what’s going on here.  I’m hoping this week will be much more productive than last week.

  3. I'm sorry to hear you've been sick. I know a lot of people with colds right now. Thank goodness, me and my husband aren't one of them! I haven't been sick in four years and hubby much longer than that (he's rarely sick), but I know a cold could easily hit one of us at any time. You're exposed to little kids all the time; Brian and I are don't have any littles around, so that's probably one reason why we've been able to avoid viruses.

    You are so organized...I love your to-do list! Thanks for the inspiration. A fajita bar is a perfect idea for when you have company or a lot of people to cook for.

    Your husband's orchids are beautiful. I'm pretty good with house plants, but orchids always die on me. I've tried everything they suggest as far as lighting, watering, the pots they're in, etc and still no luck.

  4. I have not had a bad cold yet this winter and I am hoping to get through without one. I was able to get an orchid to last several years,and bloom almost every year, but I had to keep getting bigger and bigger pots.

  5. What pretty orchids! I'm glad you're on the mend. We all had whatever viral yuck has been going around before Christmas, and although my daughter got hit harder, mine lasted longer. It's terrible!

    And you and I have the same oven/stove! I scrubbed the stovetop this weekend and got around the burners with a toothbrush. THAT felt satisfying! :) I had an electric range in my old house, so this is a step up and it's lovely to cook on. :)

    I envy your collection of vintage pyrex. Why my mom got rid of hers is beyond me. I guess it was the lure of Tupperware.

  7. Oh, that blue orchid! Blue flowers are a favorite of mine.
    I'm glad you're feeling better. I always have a big list for the week at the beginning of the week, then "life" gets involved and my big list is still there at the end of the week. Sigh.

    The flowers are so lovely! And, your dinner sounds and looks delicious. I'm getting ready to fix a similar recipe in my crockpot this afternoon. =)

  9. I have orchid envy! My uncle was a master at orchids and had greenhouses full of them that he had collected. I was never interested in them when he was alive or I would have learned how to care for them and now I wish I had taken an interest in those greenhouses full of flowers.

    We are almost never sick since we started taking an extra 5000 mg D3 daily from Oct 1 through May. I was not a real believer in it until we skipped a few days over Christmas and came down with a bug. I am being much more vigilant now to take it everyday.

  10. I have orchid envy too! Your husband's got quite the green thumb.

    I've kept our light pink pointsettia going after Christmas. It's nice to have something pretty in the house during the winter months.
