January 16- food prep and a new way to eat leftovers


Hello everyone 
I wrote up a menu sheet for meals we have ingredients for.  It will cover at least 2 weeks and meals are listed in no particular order. 
I will cross off each main meal as we eat it.  



I did a little food prep for the week ahead 


From left to right 
Fresh strawberries in red Jello
1 Chopped red onion 
A sweet potato and white potato to roast with supper tonight 
4 diced yellow onions 
5 peeled oranges 
2 pounds of peeled and sliced carrots (sliced by the Presto Salad Shooter) 

My son said he learned this method on Instagram and they have been using their leftovers to make yummy panini sandwiches.  
You start with a large tortilla like the kind for sandwich wraps, and cut one slash in it just to the center 
Then add whatever leftovers or fillings in each fourth
   

Now fold each quarter in until it’s folded into a quarter 




Then heat it in a Panini machine (I’m sure a griddle or skillet would work too, you’d just need to flip it to cook both sides)

You end up with a fancy restaurant type sandwich.  




I think these are a wonderful idea- and a thrifty way to use up leftovers,  even tiny amounts.  And if your fixing multiple sandwiches,  it would be easy to make them different to please each eater.

I love that panini sandwich idea! It would be a fun one for the kids - just set out an assortment of ingredients and they get to make their own custom sandwiches. We're definitely going to do that!
Jess has the kids this next weekend, and we're going to make sushi with them. Neither of us has ever made it, so we'll go the simple and easy route, but it'll be fun. It will be fun, right? Lol.
P.S. - loved Nina's hot cocoa bombs in your previous post. I've not made them, but might try for a Valentine's gift for the grands. Maybe just once. It'll be fun, right? :)

That is a good idea for leftovers. I use my George Foreman to do that.

Great idea for using leftovers! Looks yummy too.

It's been ages since I have made jello---used to be a mainstay in our house.

I opened the freezer for myself and wrote down possibilities for main meals. It does help to have a list. Especially since we need to think about food EVERY DAY!!!

I just planned our weekly meals and now I need to make a trip to Trader Joe's. I don't know if I'm going to head there today or tomorrow. I made a pork butt in the Crockpot yesterday and it made a ton of shredded pork. We will have pulled pork sandwiches tonight (with my homemade broccoli slaw on top) and a side of roasted potatoes. Tomorrow, I will use the leftover pork to make a posole stew. The rest of the meat will be frozen for later use.

Those pressed tortilla sandwiches look so good. I don't have a panini press but I do have a vintage cast iron press that I use in a frying pan when making things like grilled cheese. I will have to try your tortilla idea!

I like the idea of the wrap, we use low carb tortillas from Aldi and they are good. Would make a nice warm lunch for my husband and me. Do you use the same lids all the time with onions, wondering about the smell.

And that panini sandwich idea. So smart. I will be trying that.

Finally, thanks for your menu. I'm always looking for ideas. One I pulled, was pork and sauerkraut. I love sauerkraut but dh doesn't. I make him sloppy joes that night since I don't care for those. :)
