August #2 - 🌞Good Monday Morning 🌞

Hello everyone
This will be a short post as I’m hoping to get things done today (besides just play Scrabble Go online, which is what I did most of yesterday afternoon) 

My weekly to-do list 


And food preparation for the first of the week 



A big salad - believe it or not, my husband has been eating salad sometimes for breakfast 
Diced Onions- and I did look up my red onions to make sure they were not the brand with salmonella 
Boiled eggs
2 bowls of pimento cheese- I used white cheddar so it’s not as orange as typical pimento cheese (one dish is for my parents) 
And a bowl of fresh salsa before I stirred it up 

We are having a cool front right now,  it’s 66 right now and very pleasant.  I think I’ll open up the windows like I did yesterday and let in more fresh air.

  1. Ohhhh a cold front. Actually had to put a thin robe on to have coffee outside this morning..Central Texas in August!!

    Can you share your pimento cheese recipe when you have time?? Have never made homemade.

    And what I _Just_read, it is all onions, from a certain place. "Red, yellow, white and sweet yellow onions are included in the recall among Thomson's 11 brands, including: Thomson Premium, TLC Thomson International, Tender Loving Care, El Competitor, Hartley's Best, Onions 52, Majestic, Imperial Fresh, Kroger, Utah Onions and Food Lion."

    "The FDA and CDC have urged customers, retailers and restaurants to throw out the recalled products, plus any onions that do not disclose a source of origin."

    So that covers a lot of onions! Me'thinks any onions I have at present, are going out. And look for some, at a local farmer's market.

  4. That salad and the pimento cheese look good. Funny story about Obie and pimento cheese. When he was about 7 years old, our little church was going to move into an old lake house a member offered us until we could find a permanent building. I was the only person with the time to sort through the stuff that a renter had left, and get the house cleaned up for use. So every morning I would get up, and Obie and I would spend the day doing this. For lunch we would drive home, and since it was the easiest thing to fix, I would make pimento cheese sandwiches. Obie used to loved them, but after a week, he got tired of them. Ever since, he will "EASE up the side of the sandwich to check that he's not getting pimento cheese! BTW--your photo looks lovely.

  6. I am glad your red onions were not affected. That is pale pimento and cheese, but i bet it tastes delicious. Tommy will eat salad if he does not have to fix it!

  12. Rhonda, I was hoping you could share a little more about your food prep secrets to keep stuff fresh.
    How long do the cut veggies keep in the fridge? I've done lettuce before and it seems to get icky within a couple of days. Your pics always make my mouth water and I'd love to have stuff ready to go like that.
