He Really Really likes lentil tacos!
Lentil tacos aren’t everyone’s favorite meal but my husband and I sure do like them and so do our grandchildren
Today, I made our favorite lentil taco recipe times 3 in our big crockpot.
We had them for our supper, in flour tortillas with traditional taco toppings.
A triple batch makes lots of taco filling so I packed up the rest in meal size containers to freeze for future meals.

ReplyDeleteI've made and eaten lentils tacos in the past - different recipe than yours, but very good! I don't make them anymore because unfortunately, I can no longer digest brown lentils. (Can digest small amounts of red lentils though.) I like your idea of all this bulk cooking you've been doing with the lentils and the shredded beef. Great to have these things in the freezer that you can just pull out for future meals. When you have a lot of mouths to feed, that's the way to go!
ReplyDeleteI buy brown lentils because that’s just what kind Walmart has. And living where we do, most of my grocery shopping is done through Walmart. I don’t think we’ve ever had green lentils, but I would imagine you could make lentil tacos with them too.

DeleteI'm going to be in Florida for two weeks at the end of October-mid November, so I'm putting single serve meals in the freezer for Greg to have while I'm gone. Also, my aunt eats a plant-based diet, so the lentil tacos recipe will be great for both our freezer and to enjoy while I'm at her home helping her after a surgery.
ReplyDeleteSo far our "eat at home-tober" is going so-so. I need to get breakfast items prepped for Greg to take to work, and we were invited out for dinner last night for Greg's dad's birthday. This weekend we're out of town on Saturday with my sister and her husband, so lunch will be out. I'll prep something in the crockpot for supper after we get home.
Good for you to get to take a trip to Florida and for eating at home. We really like lentil tacos and I imagine you are plant-based aunt will like them as much as we do.
