September #1 - peppers

Melanie  (she blogs here at Comfy House  ) asked me what we were doing with all the peppers my husband has been raising.  

I’ve been cooking with some of them
This morning we had hash browns with 1/2 an onion and a whole pepper diced with the potatoes and an over easy egg on top 


I’ve canned sliced jalapeños with onions and carrots earlier this summer.
This weeekend,  I canned just diced jalapeños.  


Many peppers are in the freezer.  Most have been diced or sliced,  put on a lined tray and into the freezer overnight and then put in bags to use later.  


The strips are so good sautéd with onion and used as fajita vegetables.

If you’re wondering if I’m a chef with amazing knife skills.....
No I am not.  I used a Mueller chopper bought on Amazon.  It chops great but is a bit tricky as the top plate comes loose too often and it takes a lot of work to clean but it does chop lots of veggies way faster and more precise than I can manually.  


Below are carrots cut with the 1/2 inch size blades.  I used the 1/4 inch blade for peppers and onions.  


I plan to cook this carrot recipe later this week,  it has several steps but is very tasty

  1. I hate biting into bell peppers, but I love them in food. If they are chopped small enough, I can allow them in my mouth...lol. Tommy will eat them, so if I put in large pieces, he gets to eat the bell pepper strips. I have bee meaning to get bins for my upright. Now, is the time...lol. I think I need a chopped. Does it chop, handle onions well?

    1. I like the bins in my freezer very much! I think I ordered mine on Walmart.com
      The chopper does onions and I chop about when 2 quarts at a time and keep,them in jars in the fridge. But it’s hard to clean and the top plate comes loose about every other chop. But I still like using it.

  2. Intrigued by your cheddar carrots recipe! What is that ingredient under the onions? Can't read it 😄

    1. Oleo - which is a butter substitute like margarine.
      You can use butter or margarine either one.
      I guess people don’t say oleo anymore 🤷🏻‍♀️

  3. The only thing I miss about our big house is the deep freeze. So far, we haven't figured out a way to fit one into our new condo.

  4. I love my chopper and my top plate stays in place most of the time. It does occasionally come loose so I can understand your frustration. As soon as I finish using it my husband grabs it and starts cleaning it, LOL!

  7. I have a chopper, too, but I just picked it up at walmart. It makes a fairly small dice, but I love it when I need to do a lot of onions. If I need minced garlic, I throw that in there as well. It's a handy device, but mine is difficult to clean as well.
    Your freezer stock looks amazing! We're eating out of the freezer this week to make room for new food. Lol. I want to make some soups in preparation for cooler weather, but there's no place to put it...

  9. Your posts are spurring me on to hurry and start harvesting summer vegetables! Granted, I don't have my own (our tomatoes are done), but the farm stand still has tomatoes and corn. It's just the two of us, so I don't need to do much, but I'd love to have fresh corn to use in the winter. I love how full and organized your freezer is. You will love all those fresh peppers in the winter!
