February 12 - just waiting on Snowmegaden

Hello everyone 

Our weather forecasts are just frightening-and it doesn’t matter which network I look at, they all say about the same. 

Maybe 15 inches of snow and very cold for a long time - this seems like a forecast for northern Alaska, not Oklahoma. 

Lejmom asked if I still keep a stocked pantry and yes I do. 
About the Great Value green beans,  the ones I’ve bought seem fine.  I’m sorry you had bad ones.  

 My husband had an early dr appointment today and I didn’t go with him.  He’s been scheduled for a knee replacement in March so will need to do a few things to get ready for that.  

Breakfast was some of the nut bread baked yesterday, toasted.  It was so good with my hot tea! 

Lunch was leftover soups and jalapeño cornbread.

For the cornbread,  I used our very favorite recipe and added a drained can of Mexican corn,  about 1/3 cup of diced canned jalapeños and some sliced jalapeños on top.
The jalapeños grew in our backyard yard and I canned them.  For jalapeños,  they are NOT hot,  they just have a really nice pepper flavor.

They’ve ripened a bit but even the yellowest ones are not yet ready to eat.  
🤷🏻‍♀️ I don’t know how they will do- we will see!

Hi Rhonda,

I have worked in the school cafeteria and at Friendship Meals which means in the past I have taken many classes at Vo-Techs schools for cooking. We learned you can cut the sugar in any baked recipe by 1/4 without hurting the quality of the product. I have done this ever since. Sometimes after trying a recipe once the next time I might decrease the sugar by 1/3 or even a half. I thought this tip might help if you are trying to watch your sugar intake.

We have been in the deep freeze here in Saskatchewan, Canada for the last week. Supposed to be warming up. Hopefully you are missed by the worst of what is heading that way.

I have never been so happy to have a well stocked pantry as this past week. Always a great idea.

It is very cold where we live, but not that bad here. The snap will last until we get back so we will miss it all together.

That sure is a lot of snow! We have bitter cold too but not as much snow as you thank goodness. It seems like those storms keep coming and won't stop.

Bananas are so green anymore. Now I just buy them and hope for the best. I hope yours did well in the end.

Cold and snow seems to be the forecast for many. That is a lot of snow. Please stay in and stay safe and warm. Warmer days are coming!!!

Thanks for the banana keeper experiment update! I hadn’t ever seen one, now I am riveted to see if it works ;). We eat a lot of bananas and if this device helps me manage their ripening, it would be great.
